Brioche Eggy bread with honeyed banana and blueberries

Get the kids to help you out in the kitchen with this one. Its' great fun! Perfect for a cold, lazy Sunday breakfast.

  • 2 tablespoons Montefiore Mascarpone
  • 1 brioche loaf
  • 3 eggs, lightly beaten
  • 1 teaspoon of vanilla essence
  • 1 cup of milk
  • 50g butter
  • 3 tablespoons honey
  • 2 ripe bananas
  • 1 punnet of blueberries
  • ½ teaspoon cinnamon (mixed into mascarpone)


Cooking Method:

  1. Cut brioche into thick slices
  2. Whisk eggs, milk and vanilla essence together.
  3. Dip the brioche into the egg mixture, letting any extra drain off.
  4. Heat a large frying pan adding halve of the butter to medium heat.
  5. Add the eggy brioche to the pan and fry until golden brown.
  6. Cook the rest of the slices of brioche in the butter.
  7. To serve arrange the brioche on the plate the sliced banana, blueberries, honey and a dollop of mascarpone.
