Chicken Wrapped in Nori

By wrapping the chicken in Nori makes this dish even more delicious! A very fantastic snack or a very tasty canapé.

Ingredients:

  • Vegetable oil for shallow frying
  • 2 pieces of chicken breast, skin off and cut into bite size pieces
  • 1 tablespoon cornflour combined with 2 tbs. water
  • ¼ cup ketjap manis
  • 1 tablespoon ginger grated
  • 2 nori sheets, 7cm x 2cm strips

Dipping sauce

  • 2 tablespoons lime juice
  • 1-2 tablespoons fish sauce
  • 2 tablespoons. water
  • 1 tablespoon sugar
  • 1 tablespoon sambal oelek
  • ¼ cucumber, finely chopped
  • 3 tablespoons whole egg mayonnaise

Cooking Method:

  1. Combine the cornflour slurry, kacap manis and ginger. Add the chicken and coat well. Wrap each piece of chicken in the nori roll strips.
  2. Heat oil in a large frying pan. Shallow fry the chicken until golden brown and drain excess oil on some paper towelling.
  3. For the dipping sauce mix all ingredients. In the centre of a bowl, dollop the mayonnaise in and pour over the dipping sauce. Serve with the chicken bites.
