Roast Chicken Seasoned with Almonds

This is a twist on a classic. The seasoning is very simple to make and imparts the most wonderful flavours into the chicken as it roasts.

Roast Chicken Seasoned with Almonds


  • 1 whole La Ionica Chicken
  • Olive oil
  • Sea salt
  • Freshly ground black pepper
  • 50g butter Seasoning
  • 100g ricotta cheese
  • Zest of ½ lemon
  • 25g butter
  • Sea salt
  • Freshly ground black pepper
  • 1 garlic clove, finely chopped
  • 2 tablespoons ground almonds
  • 2 tablespoons breadcrumbs
  • ¼ cup flat leaf parsley, finely chopped
  • ¼ cup chervil, finely chopped

Cooking Method:

  1. Preheat an oven to 185˚C.
  2. To make the seasoning for the roast chicken combine all the ingredients in a bowl and mix together. Place this mixture into a piping bag. Starting from the neck end of the bird place your fore finger between the skin and the breasts, move along gently, freeing the skin as you go. This process should be done with great care, as you do not want to pierce the skin with your finger and make a hole. When the skin is completely free from the breasts, pipe in the seasoning, spreading the filling evenly.
  3. Place the chicken in a heavy roasting pan and tie the legs together. Drizzle the bird generously with olive oil and season with salt, freshly ground pepper. Roast the chicken for 1 hour, basting regularly. Cooking times may vary depending on your oven and the size of the chicken.
  4. To check if your chicken is cooked, insert a sharp knife between the leg and the body. If the juices run clear, remove the chicekn from the oven and allow it to rest.
  5. Serve the chicken with your favorite roast vegetables.
