Preheat oven to 180C.
Combine the stuffing ingredients. Roll 1 ½ tablespoons of the stuffing into a cylinder that is roughly the length of the chicken. Season the chicken breast with salt and pepper. Flip the chicken over to cover the stuffing, using kitchen twine, wrap the chicken firmly.
Seal in a pan on a medium to high heat until golden and bake in the oven for 15 – 20 minutes. Allow to rest for 5 minutes before slicing.
